Featured Summer Recipe: Grilled Peach & Chicken Grain Bowl

Few ingredients capture Colorado’s summer spirit like Palisade peaches. Juicy and sun-ripened, these local gems take center stage in this easy, balanced dish perfect for lunch or dinner.

Ingredients:

● 2 grilled chicken breasts, sliced

● 2 fresh Palisade peaches, halved and grilled

● 2 cups cooked quinoa or farro

● ½ cup crumbled goat cheese

● Arugula or mixed greens

● Olive oil and balsamic glaze

Instructions:

1. Prepare your grain base and set aside.

2. Grill chicken and peach halves until lightly charred.

3. In a bowl, layer grain, greens, grilled chicken, and peaches.

4. Sprinkle goat cheese and drizzle with olive oil and balsamic for a flavorful finish.

Why It’s a Winner:

This meal delivers protein, fiber, and healthy fats, all while celebrating peak-season produce. Grilling enhances the natural sweetness of the peaches, and the preparation is simple enough for residents to enjoy in their suite or outdoor grilling area.
