Here’s a seasonally inspired recipe that’s perfect for celebrating the last warm rays of August while easing into cozy early fall flavors in Colorado!

Grilled Peach & Burrata Salad with Maple Balsamic Drizzle

Juicy Colorado peaches are at their peak in August, and grilling them brings out their natural sweetness, just in time to pair with warm, earthy fall flavors like maple, toasted nuts, and arugula.


Ingredients (Serves 4)

  • 2 ripe Colorado peaches, halved and pitted
  • 1 tbsp olive oil
  • 4 cups arugula or mixed greens
  • 1 ball fresh burrata cheese (or fresh mozzarella if preferred)
  • ¼ cup pecans or walnuts, toasted
  • ¼ cup pomegranate seeds or dried cranberries (optional, for fall flair)
  • Salt and pepper to taste


For the Maple Balsamic Drizzle:

  • 2 tbsp balsamic vinegar
  • 1 tbsp pure maple syrup
  • 1 tsp Dijon mustard
  • 3 tbsp olive oil
  • Pinch of salt


Instructions

  • Grill the peaches
  • Brush peach halves with olive oil and grill face down for 3–4 minutes until grill marks appear and fruit softens slightly.
